Great Harvest Bakery Adds Fairbanks Location

The operator of one Great Harvest Bread Co. in Fairbanks plans to open a second location in early 2023.

Tricia Cray has owned her current Great Harvest location on College Road since 2012. The franchise has been doing so well—thanks to her daughters, husband, and mother working by her side—that Cray is ready to expand by February.

“Our new location will be within two miles of our current one, with the addition of a drive- through,” Cray says. “Formally an old Pizza Hut, we are completely remodeling from the inside out. We’re excited to make it our own, open our doors to our loyal customers, and bring the convenience of a drive-through to our community.”

Great Harvest Bread Company is a Montana-based chain that mills its own flour from wheat grown in the Montana Golden Triangle. Its retail bakery cafés are known for fresh, made-from-
scratch bread and desserts.

The company’s “freedom franchise” model means that local owners are allowed to operate their business in whichever way best fits their community’s needs. For Fairbanks, this means
the addition of a drive-through window.

The new location brings even more pies and made-from-scratch soups to locals, providing job opportunities for ten to fifteen new employees, in addition to the twenty-seven currently working in Fairbanks.
