Silverbow Bakery, Restaurant & Catering Taps Jennie Rizzo as Executive Chef

JUNEAU –The historic Messerschmidt Building has housed one form of bakery or another since 1902, making its current occupant, Silverbow Bakery & Restaurant, Alaska’s oldest continuously operating bakery. Now, for the first time in more than a century, the kitchen boasts a Le Cordon Bleu-trained executive chef: Jennie Rizzo.

With an eye on broadening the menu and extending the reach of its catering arm, the Silverbow hired Chef Rizzo, 33, a multi-talented culinary artist with uncommonly sharp baking skills.

Originally from suburban Chicago, Chef Rizzo comes to the Silverbow from positions at Talkeetna Lodge, where she worked as executive sous-chef, and Orso in Anchorage. There, she served as both line chef and pastry chef, baking for Orso and the Glacier Brewhouse.

“I keep going back and forth between sweet and savory,” says Chef Rizzo, who graduated from Le Cordon Bleu College of Culinary Arts in Chicago. “Silverbow gives me the opportunity to work on both sides, every day.”

Joining Silverbow this past March with the official title of Executive Chef and Kitchen Manager, Chef Rizzo assumes responsibility for all Silverbow kitchen production. Already, she’s rolled out several new sandwiches and salads, with daily specials, plate lunches and weekend brunches to follow; within days of arriving, she took fourth place in Juneau’s first-ever BaconFest.

“But what excites us most about Chef Rizzo is what she brings to the table in terms of catering,” says Jill Ramiel, Silverbow co-owner and general manager. “Successful catering is about attention to detail and awesome food—that’s Jennie.”

Indeed, Silverbow’s re-invigorated catering menu features all homemade, hand-crafted items, including (due to popular demand) Chef Rizzo’s BaconFest entry: Flatbreads with Bacon & Onion Jam. Silverbow’s authentic New York-style bagels and sourdough bread, made from the bakery’s original 100-year-old starter? Yes, those will stay the same.
